The one we chose ourselves \u2013 farmers, fishermen, winemakers, artisans. People who do things honestly, with love and a story. Come take a walk through our kitchen with us and meet them.     <\/strong><\/p>\n\n<p><strong>Italian Products from PARMIPASTA<\/strong><\/p>\n\n<p>It&#8217;s 7:30 AM and the driver from Parmipasta walks through the door. He&#8217;s carrying a lot \u2013 salamis, prosciutto, cheeses, flour, and burrata. Quality ingredients that give our dishes that perfect dimension. These products come straight from Italy \u2013 from various regions like Sardinia, Sicily, through Lazio, Puglia, all the way to Alto Adige. Owner Kajo Kudry works with producers and farmers he knows personally: &#8220;Some of them for 20 years now. When selecting, we emphasize clear origin of ingredients, traditional processing, and the authentic character of each product,&#8221; he says. &#8220;Quality is synonymous with honesty for us. In the ingredients, in the production process, and in the overall approach. A product must taste natural and maintain the same level consistently. No shortcuts, no compromises,&#8221; he adds.<br\/><br\/><\/p>\n\n<p>\u201eMy favorite product is prosciutto San Daniele with its delicate sweetness, low saltiness, and creamy fat that melts in your mouth thanks to slow aging in the environment between Alps and the Adriatic. We take the whole leg and slice it fresh. This preserves the aroma, juiciness, ideal slice thickness, and prevents oxidation and drying out. It\u00b4s definitely superior to most others thanks to stricter len selection, gentle salting without chemical interventions, and natural aging that highlights the taste of the meat rather than the saltiness,\u201d says head chef from Pansk\u00e1 &#8211; Jakub Ben\u010do.<\/p>\n\n<p><strong>Herbs from<\/strong> <strong>MICROGREENS<\/strong> <strong>SLOVAKIA<\/strong><\/p>\n\n<p>When you see that delicate green crown on your plate that looks almost too good to eat &#8211; those are herbs from Microgreens Slovakia. Our friends Pity and Lucy didn\u00b4t just start a family together, they also started a family herb farm. Pity is a trained chef and a farmer at heart. He really knows his herbs, and you can see it in every single sprout that passes through his hands. Lucy, on the other hand, is the soul of the business and ensures the herbs make it all way to us. Their fragrant coriander ends up in every one of our seafood dishes. We usually add their red mizuna to main courses and salds, and lemon balm elevates the taste of our dessrts. They come from the Mediterranean area and the Grado and Marano lagoons. Thanks to modified atmosphere packaging, they retain their authentic taste, texture, and nutritional properties without the use of preservatives.  <\/p>\n\n<p>&#8220;In the past, our guests loved sea bream or sea bass with stuffed ravioli. Currently, it&#8217;s pasta with Vongole clams, salmon, or grilled octopus. We constantly strive to bring something that takes guests on a flavor trip to the sea,&#8221; says head chef from Vent\u00farska \u2013 Richard Leskovsk\u00fd.<\/p>\n\n<p><strong>Beer from GENERAL<\/strong><\/p>\n\n<p>Where are they from? \u2013 Right from Bratislava. Pride in a glass, as they say.  <\/p>\n\n<p>What do they brew? \u2013 Various types of hops. Honest and trendy.  <\/p>\n\n<p>Why them? \u2013 Diversity, craftsmanship, values. <\/p>\n\n<p>Our favorite pairings:<\/p>\n\n<p>Red Fruit &amp; YUZU 12\u00b0 \u2013 Diavola pizza with n&#8217;duja mayo, capers, and salami \u2013 a perfect balance of spicy flavors with a sweet-and-sour brew \u2013 Gatto Matto Vent\u00farska<\/p>\n\n<p>BETTY non-alcoholic \u2013 pizzetta with pulled pork shoulder, scamorza, cucumber, and dill \u2013 a beer that drivers will appreciate paired with a favorite snack \u2013 Gatto Matto Rusovce<\/p>\n\n<p>GRUNT 11\u00b0 draft lager \u2013 beef rump steak prepared on wood charcoal \u2013 honesty that underlines the taste of quality meat from the Josper grill \u2013 Gatto Matto Pansk\u00e1<\/p>\n\n<p><strong>Liqueurs from Czech Distillery LANDCRAFT<\/strong><\/p>\n\n<p>The bar counter is gaining bottles of fruit and herbal liqueurs from Landcraft&#8217;s artisan production. A conductor and a chemist by profession decided to transform their passion for nature into something tangible. In the Czech Republic, Ondra Kopi\u010dka and Petr Alexander don&#8217;t even need an introduction anymore.   <\/p>\n\n<p>&#8220;Before we founded Landcraft, we&#8217;d never been to a bar. We came to the whole work with alcohol from a completely different angle. From nature, growing herbs, trees, orchards, vineyards, beekeeping, through studying the substances that are in those herbs and fruits, to understand them. It often happens that we create something that doesn&#8217;t fit into the concept of a classic bar. We don&#8217;t make classic vodka or tequila because we&#8217;re much more interested in capturing the landscape and all the beautiful things in it than just alcohol. That&#8217;s our philosophy. And also a big theme: waste processing. That is, what others consider waste and we don&#8217;t! That&#8217;s how you could describe our collaboration with the family winery from Such\u00e1 nad Parnou. This tradition has been passed down here from generation to generation, which Mr. Jozef Zvolensk\u00fd would happily tell you about.
