Every morning when we open the doors to our kitchen, a piece of Slovakia, Czech Republic, Italy comes with us… Our family comes with us. The one we chose ourselves – farmers, fishermen, winemakers, artisans. People who do things honestly, with love and a story. Come take a walk through our kitchen with us and meet them.
Italian Products from PARMIPASTA
It’s 7:30 AM and the driver from Parmipasta walks through the door. He’s carrying a lot – salamis, prosciutto, cheeses, flour, and burrata. Quality ingredients that give our dishes that perfect dimension. These products come straight from Italy – from various regions like Sardinia, Sicily, through Lazio, Puglia, all the way to Alto Adige. Owner Kajo Kudry works with producers and farmers he knows personally: “Some of them for 20 years now. When selecting, we emphasize clear origin of ingredients, traditional processing, and the authentic character of each product,” he says. “Quality is synonymous with honesty for us. In the ingredients, in the production process, and in the overall approach. A product must taste natural and maintain the same level consistently. No shortcuts, no compromises,” he adds.
Herbs from MICROGREENS
When you see that delicate green crown on your plate that looks almost too good to eat – those are herbs from Microgreens Slovakia. Our friends Pity and Lucy founded not just a family together, but also a family herb farm. Pity is a trained chef and a farmer at heart. He really knows his herbs, and you can see it in every single sprout that passes through his hands. Lucy is the soul of the business and the guarantee that the herbs make it all the way to us. Their fragrant cilantro ends up in every one of our seafood dishes. We usually add their red mizuna to main courses and salads, and lemon balm elevates the taste of desserts. Subtle, yet healthy and sophisticated!

Fish and Seafood – ADRIATICA
Every Tuesday and Friday morning, fish and seafood head our way straight from the best fish markets. They come from the Mediterranean area and the Grado and Marano lagoons. Thanks to modified atmosphere packaging, they retain their authentic taste, texture, and nutritional properties without the use of preservatives.
“In the past, our guests loved sea bream or sea bass with stuffed ravioli. Currently, it’s pasta with Vongole clams, salmon, or grilled octopus. We constantly strive to bring something that takes guests on a flavor trip to the sea,” says head chef from Ventúrska – Richard Leskovský.

Liqueurs from Czech Distillery LANDCRAFT
The bar counter is gaining bottles of fruit and herbal liqueurs from Landcraft’s artisan production. A conductor and a chemist by profession decided to transform their passion for nature into something tangible. In the Czech Republic, Ondra Kopička and Petr Alexander don’t even need an introduction anymore.
“Before we founded Landcraft, we’d never been to a bar. We came to the whole work with alcohol from a completely different angle. From nature, growing herbs, trees, orchards, vineyards, beekeeping, through studying the substances that are in those herbs and fruits, to understand them. It often happens that we create something that doesn’t fit into the concept of a classic bar. We don’t make classic vodka or tequila because we’re much more interested in capturing the landscape and all the beautiful things in it than just alcohol. That’s our philosophy. And also a big theme: waste processing. That is, what others consider waste and we don’t! We’re able to make something good out of it,” says co-founder Ondra Kopička.

Wine from Slovak Vineyards TERRA PARNA
Two families, one vineyard. That’s how you could describe our collaboration with the family winery from Suchá nad Parnou. This tradition has been passed down here from generation to generation, which Mr. Jozef Zvolenský would happily tell you about. Meanwhile, his daughter Ema would pour you a glass of something good.
Our favorite wines from the Zvolenský cellar: Riesling, Modrý Portugal, Alibernet.
Next time you’re at Gatto Matto, be sure to try them. Terra Parna isn’t just a partner for us – we love creating experiences together. We love cooking in the middle of their vineyards, which is how many interesting pop-ups come to life. Follow us so you don’t miss the next event with Terra Parna.
